When will SLO Public Market open? Here’s the latest restaurant to join project
A Thai noodle bar will be among the businesses to open at San Luis Obispo Public Market at Bonetti Ranch, which is finally nearing completion after multiple delays.
Baht will feature “street-style Thai food inspired by the market of the Bangkok district,” according to market officials.
Located at 3845 South Higuera St., near the intersection with Tank Farm Road, SLO Public Market has been in the final planning and construction phases for several months. The long-awaited project is planning to launch sometime this summer.
“We are currently working toward sometime during Summer 2021,” a SLO Public Market representative said in an email.
Completion of the SLO Public Market project has been delayed multiple times in recent years. The market previously planned to open in 2019, but that didn’t come to fruition.

Baht is one of two Asian restaurants set to open at SLO Public Market. Bing’s Bao Buns, which serves up dim sum, steamed bao buns and Korean-style fried chicken, announced its plans to join the marketplace in July 2019.
“The creators of Baht focus on keeping their exquisite tradition alive by celebrating a sense of street culture through their dishes that represent the diverse regions of the Kingdom of Siam (Thailand),” a news release states.
The restaurant’s menu will include noodles, proteins and fresh vegetables incorporated into customized entrées.
“Every guest can truly customize their meals tailored to their diet or preferences on this bespoke journey,” the release states. “Guests can also choose from many of the wildly delicious options Baht features from classic street-noodle dishes like pad thai to curry and many more.”
Other tenants signed up to join SLO Public Market include a brewery, a coffeeshop, a gym and businesses offering everything from cheese and acai bowls to ice cream, chocolates and cocktails.
According to the SLO Public Market website, the following merchants are slated to open at the market:
