Luxury SLO County resort is adding a spa hotel, restaurant and conference center
A San Luis Obispo County wine country resort is planning a major expansion that includes a separate new spa hotel, a new restaurant, a conference center and more.
Allegretto Vineyard Resort, located at 2700 Buena Vista Drive in Paso Robles, is in the process of acquiring a 10.8-acre parcel adjacent to its current property at the southeast corner of Dallons Drive and Buena Vista Drive.
The property was owned by Cuesta College, but Ayres Paso Robles, the company that manages Allegretto, is now under contract to buy it, according to City Council documents.
Allegretto currently operates a 171-room, Tuscan-inspired hotel resort with a restaurant, bar and tasting room, according to its website.
The new expansion would add another 171,888 square feet to the Allegretto compound, according to a staff presentation at a March 17 Paso Robles City Council meeting.
The heart of the expansion features the new, full-service spa hotel, complete with treatment rooms, indoor and outdoor pools, retail shops, a garden and fitness areas, according to a presentation by Thom Jess with Arris Atudio Architects.
The expansion will add 93 hotel rooms to the Allegretto property, along with a conference center, a new restaurant, a viticulture building and other ancillary buildings.
That would bring the total number of hotel rooms on property to 264.
Douglas Ayres, owner of Allegretto, estimated during the meeting that the project would require about two years of construction per section of the expansion.
The City Council unanimously approved the plans and the necessary zoning adjustments needed to make the Allegretto project happen through four different votes during its March 17 meeting.
Councilmembers expressed their support for the project and excitement about the new amenities that’ll be available to the community.
“I want to make a motion, but I’d like to start out by first saying thank you to Mr. Ayres for believing in Paso Robles,” said Councilmember Steve Gregory before making a motion to approve the project. “We believe in you, you believe in us and it’s been a great partnership so far.”
In a statement made to The Tribune through a spokesperson, Ayres said the vision for the evolution of Allegretto has been in the works for a decade.
“Our long-term plans for expansion have been reinforced by the requests of our guests and our community, though there is still important work to be completed before entering the next phase,” he said. “What excites me most is the opportunity to continue elevating world-class hospitality on the Central Coast while creating a welcoming gathering place for our community to call their own.”
