Get ready to scream for ice cream — the long-heralded grand opening of the San Luis Obispo Doc Burnstein’s Ice Cream Lab is officially set for Jan. 24, management says.

Owner Greg Steinberger, who also has Doc Burnstein’s locations in Arroyo Grande and Orcutt, started leasing the San Luis Obispo space on Higuera Street last May when Cold Stone Creamery closed.

He began renovating the site when he took over the lease in June, with plans to be open by August. The opening was delayed however, due to changes in the store’s design, spokesperson Cat Keith said.

“We changed up our design a little bit mid-way through (renovations),” Keith said. “It’s going to look a little different than our other ice cream parlors in Orcutt and A.G.”

The new Doc Burnstein’s Ice Cream Lab will take on more of a laboratory feel, with guests getting the chance to view the new flavor creation process, Keith said.

Keith did not know how much money had been invested in the renovations, but before the changes in design, Steinberger had said that the amount was more than $250,000.

The new location at 860 Higuera St. will open for business at 5 p.m. Jan. 24. The first 100 customers will be given a “Golden Ticket” for a free ice cream sundae each month until the end of the year.
