Newly renovated hotel brings wine country charm to Paso Robles. Look inside
A 17-year-old hotel has stripped its old roots and started anew as a partner for a renowned hospitality chain.
Bellasera Hotel & Suites in Paso Robles sits surrounded by wineries and tasting rooms. After undergoing a 9-month renovation, the hotel’s charm now extends to its new luxury suites and European design.
The hotel is also now part of Hilton’s Tapestry Collection.
“Going through renovation and seeing everything that goes on, it’s like watching a child grow up,” Benny Cendali, general manager of Bellasera, told The Tribune. “You see the vision that’s coming down the line, and seeing those pieces all come together, it makes you and the team very excited to work in this space and bring this to our guests and show it off and be excited about.”
What changed at Paso Robles hotel?
Bellasera remained open during demolitions and construction which went from May to February, but fully unveiled its new look mid-March.
The hotel’s design is described by Cendali as European-inspired, with Spanish-style architecture to transport guests to another place.
“As you step into our hotel, you feel as if you’re being transported away in a European oasis we have here in Paso,” he said. “While you’re leaving the wineries and coming back here, something takes you away from Paso.”
The renovation included the installation of fireplaces and private jetted tubs in certain rooms. A heated outdoor pool, whirlpool and fireside cabana were also new additions, Cendali said.
Bellasera hotel restaurant features new Italian menu
Bellasera Hotel & Suites opened in 2007 alongside its in-house restaurant Enoteca, which was praised for its “haute cuisine,” in The Tribune’s Dining Out section that September.
Enoteca previously served eclectic dishes like crab cocktails and rock shrimp summer rolls for the hotter months.
Now the restaurant is serving Italian dishes reimagined with local ingredients by Chef Rachael Zollo, Cendali said.
Enoteca’s dinner menu includes arancini, grilled branzino and chicken Milanese.
The restaurant’s newest program after the renovation includes an aperitivo hour Monday through Friday from 4 to 5:30 p.m. with discounts on specialty cocktails.
“We bring in more of that Italian, European-flavored happy hour into our restaurant and bring more of those flavors,” Cendali said.
From the rooms to the food, all of it is meant to highlight the unique charm of Paso Robles.
“We want to have the guest experience the local flavor, the local passion that drives our local companies,” Cendali said. “We want to make sure that our traveler’s really getting that connection. They’re not just getting a tourist type of experience. We want them to feel as if they really experienced Paso.”
