A new taco spot is serving up authentic Mexican dishes in Pismo Beach.

Tito’s Red Tacos — which celebrated its grand opening at 690 Dolliver St. on Aug. 19 — is the latest project by local restaurateur Roger Sharp, who owns several Central Coast eateries.

“I liked the theme and thought it was a great fit for the area,” Sharp told The Tribune in a recent interview.

Tito’s Red Tacos serves a variety of authentic Mexican food, including the iconic red tacos from which the spot gets its name.

New Pismo Beach taco restaurant serves ‘awesome food with a good vibe’

According to Sharp, Tito’s Red Tacos aspires to be a “fun” and “light-hearted” establishment that serves “awesome food with a good vibe.”

To create this vibe, Sharp commissioned a graffiti artist from Fresno to paint throughout the restaurant. Even the to-go boxes have their own art and branding, Sharp added.

“I put my heart in it,” Sharp said.

Sharp and the team have had ample time to perfect the menu and Sharp said he is happy with the way the food has been coming out.

According to Sharp, the restaurant has so far had a successful opening with the red tacos being a fan favorite.

In addition to tacos, the restaurant serves freshly fried chicharrones, elote and puffy rolled tacos made with red masa. Customers can choose their choice of meat with classic options such as birria and carnitas.

The restaurant also serves margaritas and beer on tap.

According to Sharp, all of the ingredients are fresh. The tortillas are made right in the restaurant and the produce is sourced from local vendors.

Currently, the restaurant is run by a team of ten employees.

Central Coast restaurant owner shares business advice on social media

Sharp’s other local restaurants include Blue Sky Bistro on the Bay in Morro Bay and Nate’s Nashville Hot Chicken in Paso Robles.

Sharp said all of his restaurants start with a concept and are then crafted to fit the area they serve.

I really take a look at what I feel is going to be the right concept for the right location for the right city for the right people,” Sharp said. “I am giving you a piece of me like it’s my art. My restaurants are my artwork, and I hope everybody loves it.”

In addition to being a prominent Central Coast restaurateur, Sharp is also something of an internet influencer — with more than 24,000 followers on TikTok and 23,000 on Instagram under the handle @restaurantmillionaire.

On his accounts, Sharp posts education videos on owning and running a restaurant, from profitability to how to market the business.

He also works as a developer and management consultant and offers his services on his website of the same name.
