Los Osos couple launching new Morro Bay sandwich joint — and they are hiring
A new sandwich spot is coming to Morro Bay — and it sprang from an idea about the need for a go-to spot in the city.
Gilligan’s Sandwich Shop is planning a May 1 opening two doors down from the Bay Theater.
Once open, the business, owned by Los Osos couple Andy and Shannon Zepeda, will offer a slate of deli options and hot sandwiches, including pastrami and melts. There will also be soups and salads.
“On those cool days, you can get a cup of soup with your sandwich and we have a nice little indoor dining area,” Shannon Zepeda said. “We might do a little special barbecue on the weekend.”
Shannon and Andy, who will be opening their first food business, said they formed their idea while visiting Morro Bay one day and being at a loss for where to get a great sandwich.
“We had some other business adventures and we were just thinking of something new we wanted to do,” Shannon said. “We were in Morro Bay one day and we were looking around for a sandwich and couldn’t find a place to grab a sandwich. We thought, ‘Maybe they need a sandwich shop.’ And then there came the sandwich shop.”
The didn’t have a special reason for naming the business Gilligan’s other than they liked the name, Shannon Zepeda said. She added that “Gilligan’s Island” was one of her favorite shows as a kid, but that wasn’t the inspiration for the name.
“Gilligan’s was born with that and we came up with a little pelican character,” Shannon Zepeda said. “We’re really looking forward to being a part of the community.”
In keeping with a boat and ocean theme, however, they are going to be decorating the shop with decor that goes along with the harbor and “boat things,” Shannon said.
They have some tenant improvements to finish up and “getting our vendors together, hiring our people.”
They’re also looking to hire a handful of employees to begin with.
