SLO sandwich shop owner is looking to add more Central Coast locations

Now that Capriotti’s Sandwich Shop has opened in San Luis Obispo, the restaurant’s co-owner is eyeing more eateries on the Central Coast.

Franchisee co-owner, Randy Stinchfield, a Paso Robles resident, said he is actively searching for new tenant spaces between Paso Robles and Santa Maria to open a second or even third Capriotti’s location.

“We’ve already looked at a few places,” Stinchfield said. “Whatever appears on the market between Paso and Santa Maria, we’re considering.”

Stinchfield opened Capriotti’s Sandwich Shop at 791 E. Foothill Blvd. on June 10 with his partner Drew Armbruster, a Paso Robles native who now lives in San Diego.

The eatery is located in the Foothill Plaza Shopping Center near Panda Express and California Fresh Market.

“This is a franchise that’s a well proven model,” Stinchfield said. “We’re really fortunate the SLO space came available, and we think it will be a huge success throughout the Central Coast.”

Stinchfield said that the San Luis Obispo sandwich shop is currently hiring for four people to join its staff, which will routinely employ more than 20 workers.

Businesses around San Luis Obispo County are facing worker shortages, and Stinchfield said a few of his employees who are students left when summer began.

Capriotti’s Sandwich Shop manager Marella Perth is the point of contact for the hiring process, and can be reached by calling the San Luis Obispo eatery or going into the store, Stinchfield said.

Capriotti’s Sandwich Shop in San Luis Obispo is one of more than 125 franchise locations nationwide offering cold, grilled and vegetarian submarine sandwiches as well as salads. The popular restaurant chain has a location in Fresno.

Stinchfield said some of San Luis Obispo customers’ favorite sandwiches so far are The Bobbie, which features homemade turkey, cranberry sauce and stuffing and the American Wagyu Slaw Be Jo, with beef, provolone cheese, Russian dressing and coleslaw. The restaurant also features a number of cheese steak options.
