Butcher, restaurant and brewery share one space at this unique Paso Robles spot
Alyssa Leal wanted a place where people could “live out their barbecue dreams.”
The business owner imagined an operation that combined a butcher shop where entire cattle could be cut to desired proportions, a little market for local produce and goods not found in supermarkets, a comfort food restaurant where quality meats could be charred, cooked and smoked, and an in-house brewery pouring unique craft beers.
Enter Primal House, the conglomerate of Leal’s dreams.
The business is co-owned by Leal, her parents Jimmy and Teresa Leal who were previously in the oil and farming industries, and her friend Bud Cole, a fourth-generation cattle rancher in Bakersfield.
“We kind of put our heads together and came up with this space and conjoined the market and the butcher shop together, and then the restaurant and brewery came afterwards as a collaborative thing,” Leal told The Tribune.
What’s available at Primal House in Paso Robles
The business does all the things: It’s a butcher shop, market, eatery and brewery where customers can meander through the space off Ramada Drive in Paso Robles to reach all parts of the operation.
“It’s kind of a destination,” Leal said. “Our customers come and they stay awhile.”
“It’s not really that they come and leave real quick,” she said. “We created a unique experience where they can grab a beer and walk around and shop, and we have people check out multiple times while they’re here.”
The building’s construction took three and a half years, leading up to Primal House’s opening at the end of May 2025, Leal said.
After owning a butcher shop in Bakersfield called Bud’s Cuts, where a third-party vendor would process cattle and cut meat for the business, she wanted a cutroom where things could be tailored and cut specifically for a customer.
With a cutroom on display as part of Primal House’s butcher shop, not only can people bring in wild game and have it butchered and processed on site, but they also can choose a steak from the shop’s display case and have it cooked by Primal House’s chef and served in the restaurant part of the business, Leal said.
“As long as we can cook it in a decent amount of time, chef’s willing to cook it for them,” she said. “People get excited about that.”
Beyond custom cuts, Primal House’s restaurant serves all-day comfort food like fried chicken and potatoes, beef tips over pasta, a hearty farmer’s stew and a hot ham sandwich.
Prices range from $14 for a scotch egg, $21 for the chicken and potatoes and $57 for a filet mignon.
10 beers available on rotating taps
Just like its butcher shop, Primal House’s brewery is also all in-house. Ten beers are constantly rotating on tap, with upcoming options including a Beast Coast IPA, Le’ Moo stout and Old Blue pilsner.
Primal House’s ambiance includes a relaxed, “welcoming” feel where “people can pick and choose how they’re feeling and where they want to sit,” Leal said.
In the evenings, the big lights illuminating the eatery dim and create a more intimate atmosphere, and a private dining room behind the brewery brings provides a quieter experience.
The restaurant is also expanding outside, with plans to unveil outdoor seating for 30 to 40 this weekend, Leal said.
Its first big event is a Makers Market on April 19 where local vendors will be set up to sell art pieces, jewelry and personalized goods.
“It’s just really cool to see people enjoy what I envisioned in my head,” Leal said., “to be able to share that enjoyment with everybody, and have people appreciate it like I wanted it to be appreciated, because it’s for them.”
