A new Paso Robles restaurant is serving up seasonal dishes and locally produced wines from inside a century-old farmhouse.

Grace & Rose opened its doors at 745 Park St. on Aug. 1.

Husband-and-wife owners Justin and Julie Fischer spent two years transforming the historical home into a 60-seat farm-to-table eatery.

Julie Fischer said the renovation was focused on preserving the integrity of the 110-year-old house.

“We didn’t want to change a lot of the structure,” she said. “We wanted it to feel like honoring the history of the home, honoring the fact that it was a home, to feel like you’re coming to dinner at somebody’s house here in this 110-year-old farmhouse.”

When guests walk inside Grace & Rose, they’re seated in a cozy space featuring rustic tables and chairs and hardwood floors. Several paintings in eclectic frames decorate the cream-colored walls, while beams of natural light flow in from large windows.

Restaurantgoers can also choose al fresco dining on the covered wraparound porch, Julie said.

Paso Robles restaurant opens in 110-year-old house

The Fischers launched Grace & Rose because they wanted to expand their culinary offerings in Paso Robles.

The couple opened their first business, the Paso Robles Wine Merchant in the Paso Market Walk, about three years ago. They recently closed the wine bar and eatery to focus on Grace & Rose.

“The Wine Merchant was really our first venture as business owners and restaurateurs,” Justin Fischer said. “What we found was that the community has really responded very positively towards our philosophy with sustainability, our food program and our wine program.”

However, the small food hall space limted the type of meals they were able to offer patrons, the Fischers said.

The couple discovered the historical farmhouse that now houses Grace & Rose when a close friend bought a home directly across the street.

“We came and looked at it — and this was in 2023 — and it was completely overgrown, completely run down, completely neglected,” Julie Fischer said. “I just remember falling in love with it. It just spoke to us.”

She also loved the oversized lot and the mature trees surrounding the home.

When Fischer and her family visited the property, she said her 3-year-old daughter started picking wildflowers in the overgrown backyard.

Although the home was in terrible shape, Fischer said she and her husband were committed to saving it.

“I just remember thinking, ‘This is it, this is where we want to be,’ ” she said.

It took two years to complete renovations and acquire permits before Grace & Rose could finally open its doors, the Fischers said.

Grace & Rose, which is named after their daughters’ middle names, is double the size of the Paso Robles Wine Merchant, allowing for more than 60 people to eat and drink inside the home.

“(We’re) just really trying to honor the space and the history of the home and the lot, and incorporate that into the experience of coming to dine here,” Julie Fischer said.

What’s on the menu at Grace & Rose?

The Fischers said their priority is giving the Paso Robles community a space to come together and share local, sustainably farmed food and wine.

“From the culinary side, at its core, it’s farm-to-table, but our approach is simple, flavorful, approachable, sustainable food,” said Justin Fischer, head chef at Grace & Rose.

The menu at Grace & Rose is packed with seasonal ingredients.

In late summer, dishes included a melon, prosciutto and cucumber appetizer sprinkled with mint and sumac, as well as a New York strip steak with charred corn, shishito peppers and fingerling potatoes with chimichurri.

Starting mid-September, the owners said the menu will shift to more fall flavors including squashes, apples and pears as well as soups and braises.

Justin Fischer recommended that first-time visitors try the popular brick chicken with greens and fennel in a white wine jus and Grassy Bar oysters from Morro Bay.

For those with a sweet tooth, the Basque cheesecake with a plum purée and honey whipped cream is a must order, Julie Fischer said.

Park Street eatery hosts popular wine nights

In addition to farm-to-table food, Grace & Rose offers a variety of local and international beers and wines.

“The wine list is great, and there’s something for everyone on it price-wise,” Fischer said.

Once or twice a month, the eatery hosts winemaker events where featured wineries pour flights and glasses of their offerings to restaurant patrons.

Fischer said three bars are set up around the property to serve local wines while a special food menu is available from the kitchen.

People don’t need a reservation to attend, and they can wander around the whole property and hang out with a glass of wine or bite to eat.

The events have grown so popular that they typically draw a crowd of around 100 to 200 people, she said.

“We want it to feel ... accessible enough for locals to be able to come here, not just a special occasion, but to really be able to come here and enjoy it too,” Fischer said.
