Curtis and Colleen Ebeling own the three stores, which are part of the Mr. Pickle’s Sandwich Shop franchise.
The shop sells a selection of sandwiches; new menu options such as soups and a broader salad selection were rolled out with the Atascadero store and recently introduced in the Templeton and San Luis Obispo locations as well.
The 1,900-square-foot space at 7177 El Camino Real in Atascadero is the largest of the three stores and has a much bigger dining area, Curtis Ebeling said.
Ebeling said they strive to create a family-friendly atmosphere and make an effort to support local charities, especially youth organizations.
They selected Atascadero for their next store because “we felt like Atascadero, quite frankly, just needed a great sandwich shop,” Ebeling said.
The Atascadero store has three full-time and 12 part-time employees. Ebeling said that’s a typical staff size for their Mr. Pickle’s stores. He declined to disclose financial information.
The couple’s son Eric is general manager of the San Luis Obispo store (which opened in October 2012), and their other son Jason is general manager of the Templeton store (which opened in October 2014). Jason Ebeling’s significant other, Brittany McMasters, is general manager of the new Atascadero store, Ebeling said.
The family will seek opportunities to open more Mr. Pickle’s Sandwich Shops around San Luis Obispo County, hopefully in the Five Cities area, Ebeling said.
