Two Cooks Catering may open storefront for takeout

Two Cooks Catering of San Luis Obispo is changing its business model — adding a dessert-only catering option and possibly a storefront early next year. And, in order to focus more on food, it is cutting back on wedding catering, focusing instead on winery and corporate events, and is adding menu items.

Beginning next year, Two Cooks will still offer food for its wedding catering business but no add-ons such as rentals, staffing and bartending, according to Heather Thomas, who co-owns the business with husband Russell Thomas. Although the company has always offered desserts, they’ve offered them only as a part of other packages.

Founded in 2006, Two Cooks caters corporate events, private parties, breakfast, lunch, dinner and dessert from Paso Robles to Santa Ynez. Russell Thomas is executive chef, and Heather Thomas is director of operations. They employ four part-time cooks and eight on-call servers.

The company leases space to six other food-related businesses at its kitchen near South Higuera Street. A seventh business, a bakery, will move into the space in January.

Two Cooks plans to open a stall at the Saturday morning San Luis Obispo farmers market next year to sell its products, especially its vegetarian chili. And it is considering adding a storefront early next year to offer prepackaged items for takeout. It would need to adjust its current business license in order to do so, Heather Thomas said.

The couple declined to disclose financial information about the business.
