The Hatch Rotisserie & Bar opens in Paso Robles
The Hatch Rotisserie & Bar, a new North County restaurant offering simple food, cocktails, wine and local beer, opened on June 15.
The restaurant is co-owned by Maggie Cameron and Eric Connolly. Located at 835 13th St. in Paso Robles, The Hatch is in a unit of the historic Grangers Union Building, built before 1866.
Cameron declined to disclose their investment in the restaurant, however she said that the space didn’t need a lot of work. An open kitchen and large bar were left over from the building’s previous years as a restaurant. It took six months to renovate The Hatch.
Chef Mateo Rogers’ kitchen includes a wood-fired rotisserie featuring traditional comfort food sourced from local producers, ranchers, growers and fishers.
The Hatch offers both sit-in and take-away options. The restaurant is open for an afternoon cocktail hour, dinner and Sunday brunch.
