Popular Paso Robles coffeehouse expands into former Thomas Hill Organics space

AMSTRDM Coffee House has expanded into the former Thomas Hill Organics space in downtown Paso Robles, adding a larger kitchen, courtyard dining and a growing coffee-roasting operation to one of the city’s longtime coffee destinations.

After several weeks of soft openings, owners Corey Jordan and Kate Smith officially announced the expansion on social media, drawing an immediate response from local customers, hospitality workers and downtown regulars.

Among them was local mixologist John Ross of Cattlemen’s Lounge at the Paso Robles Inn, who said he stopped in for breakfast after seeing the announcement online around 11 p.m. the night before.

Jazz drummer Jeff Hamilton, fresh off a performance at Libretto the previous evening, was among customers filtering through the courtyard during breakfast service.

The opening marks a major expansion for Jordan and Smith, who have kept the AMSTRDM name while growing the business from a downtown coffeehouse into a larger restaurant, courtyard dining and roasting operation.

Jordan said the AMSTRDM name was intentionally designed as a nod to the original Amsterdam Coffee House, which operated at the downtown location in the early 2000s before the space later changed hands.

“We wanted to build on that foundation,” Jordan said. “When people hear or see the name, we want our AMSTRDM brand to be associated with quality and authenticity.”

From coffeehouse to full restaurant

The expanded space now connects the original coffeehouse with the adjoining courtyard and dining areas once associated with Thomas Hill Organics.

Inside, the original wood floors remain. Outside, ivy-covered brick walls, a fountain and soft background music give the courtyard a quieter feel just steps from downtown traffic.

Jordan said he and Smith had long wanted to expand into the outdoor dining space.

“For the last six years, it has been heartbreaking telling our customers, ‘It is such a pretty patio, I know, but I am sorry you cannot go out there,’” Jordan said. “It is a beautiful and serene space, but chef Ryan Trimble was the missing puzzle piece to make the space work.”

Trimble is now a partner in the expanded restaurant and created the current food menu, Jordan said. The restaurant plans to maintain its existing menu structure while offering seasonal specials.

Brunch service from 8 a.m. to 1 p.m. includes thick-cut toast from Back Porch Bakery in Atascadero, eggs, bacon and espresso drinks, including AMSTRDM’s Himalayan salted caramel latte.

A breakfast burrito or breakfast sando runs $12, a croque monsieur is $13 and a chicken pesto sando for $13, along with croissants, bagels and more.

Growing beyond downtown Paso

The expansion also comes as Jordan and Smith continue growing Paso Robles Coffee Company, their roasting business founded in early 2025. The company originally roasted coffee solely for AMSTRDM locations before expanding into wholesale accounts that now include Allegretto, Sensorio, Della’s, Bee Rock Store, ES Aerospace and others, Jordan said.

A new coffee roaster installed inside the building will allow the company to scale from “a few hundred pounds a week, to a couple thousand pounds a week,” Jordan said.

Jordan said the business intentionally avoided publicly announcing the expansion, the lease agreement or Trimble’s involvement until the team felt the operation was fully ready.

“We wanted to ensure we were actually ready before announcing,” Jordan said.

Within 24 hours, Jordan said the opening announcement had drawn more than 1,400 likes, 400 comments, 45 shares and 25,000 views on social media.

“This community has always supported us,” Jordan said. “We are proud to present them with some of the area’s best cuisine.”

For Jordan, the expansion reflects both the growth of AMSTRDM and the evolving expectations surrounding food and hospitality in Paso Robles.

“The quality of food and service in this area has grown substantially over the last decade,” Jordan said. “We saw a major need to improve the quality of breakfast and lunch options, and we are looking to meet that need for our community — simplicity, elevated.”
