Paso Robles’ newest Mexican restaurant started as a food truck. ‘It’s just amazing’
A new San Luis Obispo County restaurant is serving up meals filled with flavors from the Mexican state of Sinaloa.
One of a Kind Mexican Restaurant at 2524 Spring St. in Paso Robles specializes in all things birria — a Mexican dish featuring beef that’s braised in a red chili broth.
Customers can order a range of birria dishes, including quesadillas, tortas, tacos, pizza and even ramen, at the new window-order restaurant.
The family-operated restaurant first opened its doors in mid-August.
One of a Kind Mexican Restaurant is owned by Eliza and Enrique Garcia, who run the business with the help of their siblings and children.
“We’re a very united family,” said restaurant manager Yahaira Garcia, Eliza and Enrique Garcia’s daughter. “Now we have our own restaurant. It’s just amazing. Everybody put in their part.”
New Paso Robles restaurant started as food truck
Eliza Garcia always dreamed of being her own boss. At the same time, community members were constantly raving about her homemade birria recipes.
In 2017, Garcia’s family decided to invest in her cooking and purchase a food truck.
However, it took three long years for One of a Kind to serve up the first taco.
The Garcia’s struggled to obtain a business license and a food permit, as well as pass health and safety certifications.
The coronavirus pandemic also prolonged the process, Yahaira Garcia said.
In July 2023, the food truck launched with a permanent spot at in the Spirit gas station parking lot at 1637 Spring St.
The Garcias called their business One of a Kind because they only sold one special type of meat.
“Our birria is one-of-kind,” Yahaira Garcia said. “It tastes like one-of-a-kind.”
One of a Kind eventually became so popular among locals that the family decided to open a brick-and-mortar restaurant.
What is One of a Kind Mexican Restaurant like?
One of a Kind Mexican Restaurant’s new space is an open-air restaurant with counter service.
Customers can order at the window and take their orders to go or eat at one of several tables under a covered patio.
The One of a Kind food truck is no longer parked as its gas station spot, but Garcia said it will continue to be used for catering.
The restaurant plans to launch online ordering options soon, according to Garcia.
What else is on the menu?
Unlike the food truck, which was only open on weekends, One of a Kind Mexican Restaurant is open for breakfast, lunch and dinner.
The restaurant also sells more than just birria.
New menu items include breakfast burritos, menudo and fried tilapia tacos with corn tortillas.
Thirsty customers can order horchata, agua de jamaica and milkshakes.
The restaurant offers a Taco Tuesday deal with tacos for $2 each from 3 to 8 p.m. on Tuesdays.

The eatery is open 9 a.m. to 1 p.m. and 3 to 8 p.m. Tuesday through Thursday. On Friday, it is open from 9 a.m. to 1 p.m. and 3 to 9 p.m.
You can stop by from 9 a.m. to 9 p.m. on Saturday or 9 a.m to 2 p.m. on Sunday.
