New SLO County restaurant serves up Mexican rotisserie chicken and Latin-American cuisine
Atascadero just got a new Mexican and Latin-American fusion restaurant, specializing in a traditional rotisserie chicken recipe from Mexico and other meats inspired by the cuisine of multiple Latin American countries.
Fuego Rosticeria, located at 8501 El Camino Real, opened on Dec. 8 after first being announced back in May.
Owner Juan Jorge opened the restaurant with his two children in the hopes of creating am eatery with an enduring legacy that will remain open for a long time.
“My son and my daughter are the other two co-owners of the restaurant,” Jorge said. “We wanted to build something that we can leave on.”
According to Jorge, his team at the restaurant has perfected the traditional rotisserie chicken recipe from Mexico. The chicken rotates over an open fire, which brings out its flavor, Jorge said.
In addition to the chicken, which is served up with tortillas and rice and beans, the restaurant also boasts an impressive menu complete with other Latin-American fusion dishes like Tri-Tip al Ajillo, Gambas al Ajillo, Quesabirria Tacos and Picanha al Chimichurri — a Brazilian top sirloin steak recipe.
The restaurant even serves up a brunch menu.
Jorge said people have been curious about Fuego and since opening they have seen an uptick in customers.
Fuego Rosticeria is located in an old building that was the longtime home of Nardonne’s Pizzeria. Because of the building’s age, Jorge and his crew had to complete extensive renovations, which took over six months to complete, a task Jorge said was their biggest challenge.
“Everything was outdated, and we have to bring everything up to date before opening,” Jorge said. “It took us from April to December to completely finish the remodel.”
Now, Jorge has a team of around six or seven employees in the newly remodeled restaurant and is able to serve the Atascadero community.
