Paso Robles restaurant earns a coveted Michelin star. It’s only the second one in SLO County

The Restaurant at Justin in Paso Robles has earned an esteemed Michelin Guide star, making it only the second eatery in San Luis Obispo County with that distinction.

It also earned an additional green star lauding it as a leader in sustainability.

The Michelin Guide distributed 18 new stars Monday, including to The Restaurant at Justin, according to a news release from Michelin.

The Restaurant at Justin, part of Justin Vineyards and Winery, is one of two restaurants in California to receive a Michelin Guide green star in 2022.

“This restaurant champions local product, sourced nearby and from the property’s own 150-tree orchard, edible flower fields, vegetable and herb gardens and apiary,” the release said of The Restaurant at Justin.

Now including the Paso Robles eatery, 11 of the 13 Michelin green star restaurants are in California, according to the news release.

The Restaurant at Justin was already awarded a Michelin plate for its contemporary California menu, but the Michelin star and green star are new additions.

“Chef Rachel Haggstrom and her team flex their creative skills on a single tasting menu. Imagine asparagus with a soft quail egg, blood orange and duck prosciutto or artichoke tortellini with truffle and peas,” the Michelin guide said. “As expected, theirs is an impressive wine list, replete with their own labels among other unique selections.”

Michelin stars are awarded by anonymous diners known as restaurant inspectors. The inspectors rank the restaurant based on the quality of food — designated by one, two or three stars — and the ambiance of the restaurant, signified by a fork and spoon.

The Restaurant at Justin is the second restaurant in Paso Robles to receive a Michelin star.

In 2021, Six Test Kitchen in the Tin City complex in Paso Robles received a Michelin star.
