SLO County deli adds wood-fired pizza to its menu. ‘It requires its own choreography’
Colony Market and Deli in Atascadero has expanded its menu options to include wood-fired pizza, as well as seasonal salads, appetizers and more wines.
The pizza menu includes vegan and gluten-free options as well as popular choices like traditional margherita-style with red or white sauce; the Spicy Goat topped with spicy honey and prosciutto; Saltimbocca — a white sauce pie topped with lemon caper chicken breast, sage, prosciutto and Parmesan cheese, according to the menu.
“We never quite knew how to make the front room of the building welcoming and functional,” Joanna Wemple, restaurant co-owner, said in a news release. “Then we realized that it would be a perfect space for a pizza oven, and the next thing I knew, plans were drawn, and the oven was being built.”
The pizzas are hand-stretched by staff and feed between one and two people, according to a news release from the restaurant.
“Working with the fire has had a steep learning curve,” restaurant co-owner Shayne Wemple said in the release. “It requires its own choreography. We have worked hard to create a menu that reflects our signature style along with classic favorites.”
Other appetizers include mozzarella sticks, bruschetta and a caprese salad with imported burrata cheese and dolci tomatoes, the release said.
The pizza oven will be fired up and ready from 4 to 8 p.m., Thursday through Sunday, the release said.
The deli is located at Traffic Way and El Camino Real in the re-imagined space where a former 20th century-style gas station was housed.
