171-room Allegretto Vineyard Resort opens in Paso Robles

Allegretto Vineyard Resort, a 171-room hotel built on 20 acres in east Paso Robles, had its grand opening Tuesday.

The resort, located at 2700 Buena Vista Drive, was built by Ayres Hotels. The company, owned by the Ayres family, has 21 other hotels — all located in Southern California. Construction on the resort broke ground in 2014. The company declined to disclose investments.

Rooms at the European-inspired resort range from $279 to $800 a night depending on the season, room type and availability. The resort grounds include a 12,000-square-foot courtyard, pool and cabanas, an abbey, walking paths, a bocce ball court, Mediterranean gardens, wine grapes, olives and fruit trees.

The resort includes an on-site restaurant open to the public, Cello Ristorante and Bar, which serves Mediterranean-inspired cuisine. The restaurant, led by executive chef and food and beverage director Eric Olson, serves breakfast, lunch and dinner.

The hotel also offers a full-service spa, Spa Allegretto, open to the public and featuring an infared detox sauna and zero-gravity chairs, along with a wellness program. Other resort amenities include a ballroom and multiple indoor and outdoor event spaces.

The resort will soon add a wine bar, said account manager Kyndal Kennedy.
