New wine-tasting room in Paso Robles to hold grand opening

A new sparkling wine bar and wine-tasting room will hold its grand opening in downtown Paso Robles on Friday.

The Rabbit Hole, which held a soft opening in September, is a project of former Veris Cellars General Manager Rick Riva and Rabbit Ridge Winery owners Erich and Joanne Russell. It is the second tasting room in Paso Robles under the Rabbit Ridge Winery label.

It will serve Rabbit Ridge wines as well as the winery’s new Bling Collection, a line of five California sparkling wines, Riva said.

“We’re trying to change up, be a little more edgy, a little more fun” Riva said of the new collection.

The Alice-in-Wonderland-themed wine bar is located at 1244 Pine St., and features decorations from the children’s classic novel, Riva said, to give the wine bar a more “fun” feel.

“ ‘Down the rabbit hole’ is such an iconic saying, so I thought, ‘How fun would it be to build an entire tasting room around that idea?’” Riva said.

Riva said he also hopes to open before Christmas a “sip-and-paint” studio in the 1,500-square-foot space downstairs, where customers can participate in painting classes while tasting any of the bar’s wines.

Riva declined to disclose the value of their investment in the project, saying that he did not have an exact estimate at this time because the project is still ongoing.

The Rabbit Hole is open Sunday through Thursday from 11 a.m. to 6 p.m. and Friday and Saturday from 11 a.m. until “there’s no one left to pour for,” Riva said.
