A new hamburger restaurant opened Wednesday in Paso Robles near the southern end of town off Highway 101.
T.J.s Grill, which stands for Thick & Juicy, features a menu that allows patrons to build their own hamburgers from a selection of ingredients.
Vegetarian options, homemade buns and seven types of fries with various seasonings and dips are also on the menu. Owner Phil Estrada of Paso Robles has a staff of three employees and plans to eventually add other meats to the grill.
Located at 630 First St., the restaurant is open 11 a.m. to 7 p.m. seven days a week. The 800-square-foot space, now featuring a Hawaiian and surfer theme, used to house a Mexican restaurant.
The restaurant is managed by Compass Health, which runs several other restaurants in Paso Robles, including Downtown Brew, Level 4 and Mission Pizza. Estrada is also an employee of Compass.
